From the former NANOCORE website (last updated 23 September 2024). The project content below is as described by EMZI on the former NANOCORE website. Authors Normaisyarah Hamat, Najihatul Syahirah Mohamad Din, Dr. Syafiq Abdul Wahab, Nur Sakinah Burhan, Alia Khalidah Ismail and Mohamed Syazwan Osman. Background Kopi Ala Kazim is described as an innovative coffee product developed through a collaboration between UiTM and EMZI Holding Sdn Bhd to provide bioactive antidiabetic compounds derived from Momordica charantia (bitter melon) extract. The poster cites 1 in 5 adults in Malaysia diagnosed with diabetes, equal to 3.9 million people aged 18 years and above. It names triterpenoids, triterpenes, saponins and phenolic compounds as the bioactive compounds in Momordica charantia that “provides a hyperglycemic effect to treat symptoms of diabetes” (wording as on the poster). Objectives To identify and optimise key process parameters to maximise the yield of bioactive compounds from Momordica charantia. To identify and quantify the phytochemical compounds present. The work aims (1) to maximise the yield of beneficial compounds from Momordica charantia and (2) to integrate the extract powder into a coffee. Process Plant preparation: slicing, drying and grinding. Maceration (water extraction) of the ground powder. Microencapsulation of the Momordica charantia extract. Encapsulated product. The optimised parameters were used as the recipe for scaling up Kopi Ala Kazim. The experimental design used Design Expert software; its two tables (sample data and optimised design) are on the poster but only partly legible in the available copy. Enhanced bioactive compound concentration. Improved flavour stability (bitter taste). Consumer convenience. Extended shelf life. Benefits (as described by EMZI) Improve digestion. Treat diabetes symptoms. Lower blood glucose level. Reduce cholesterol level. Eliminate fatigue. Recognition The poster carries a gold seal from the Arau International Creativity Exhibition (ACE) 2023, Perlis, Malaysia, with a Best Award Category ribbon, the MIIEX’24 gold badge (12 June 2024) and the i-SIIDEC logo. See Double gold at MIIEX’24, Double gold at i-SIIDEC 2024 and Silver prize at IPITEX 2024. Commercialisation At the time of the poster, Kopi Ala Kazim was shown on emzi.com.my.
